Black Bean and Corn Quesadillas

What you need: 

1 teaspoon olive oil
1/2 cup red bell pepper, diced
1 cup frozen corn
1/2 cup black beans, drained and rinsed
1 teaspoon ground cumin
salt and pepper, to taste
juice of 1 lime
8 (7") whole wheat tortillas
3/4 cup grated vegan mozzarella cheese, divided
1 tablespoon fresh chopped cilantro

What you do: 

1. Heat olive oil in a medium sized saute pan over medium heat. Add red peppers, corn, and black beans. Season with cumin, salt, and pepper. Cook for 3 to 5 minutes.
2. Add the lime juice, stir to combine, and remove from heat. To assemble, lay 1 tortilla in a hot skillet. Add 1/4 cup filling and then top with 2 tablespoons grated cheese and cilantro.
3. Top with another tortilla and cook for 2 to 3 minutes, until slightly browned on the bottom tortilla. Flip and cook on the other side until slightly browned and the cheese has melted.
Source of recipe: This recipe was inspired from Emeril Green but I modified it to make it vegan.

SO HOW'D IT GO?

yummm, and so easy. I didn't have any red bell and I added chili powder, and garlic powder to the bean/corn mix. I used regular flour tortillas and served these up with quacamole and salsa.
Thanks, i'll be making these again - next time with red bell and I think I'll try some onion too.

i made this recipe with just 4 tortillas, not whole wheat, and i calculated the calories to be around 839 per quesodilla....kinda broke my calorie counter....thanks :/

839 calories for all 4 quesadillas?
I sat down and calculated the calories per quesadilla and came up with 390.5 for each, not including the salsa. Which I don't think is much for one meal.

Here's my breakdown ( Note that I divided all the ingredient calories by 4 to get the calories per quesadilla )
1 Tb Olive Oil ( maximum amount that should be used to spray on each tortilla before cooking  ) = 120
Red Bell Pepper = 7.5
Corn = 33
Black Beans = 27.5
Tortilla = 80
Vegan Cheese = 120
Lime Juice = 2.5
Cilantro = 0

i meant 4 tortillas as in 2 per quesodilla. meaning i made 2 quesodillas. that's the only part i reduced, because it was just me and my mom. the filling amounts were the same. o and my tortillas were probably much bigger than yours lol, mine were 173 cals each. that probably explains the huge difference.  ;)b

on the other hand, it was delicious, i would just add a bit more punch to it and my quesodillas ended up flipping themselves into a mess. on the second one i learned to put one tortilla on to crisp it up, then remove it, put a new one in, put cheese on, then the bean mixture, then the cilantro, then the crispy tortilla. it worked out just fine.
