Cheesy Tofu Scramble

What you need: 

1/4 cup nondairy milk, unsweetened or plain
1/4 cup apple cider vinegar
1 to 2 tablespoons Bragg's Liquid Aminos, soy sauce or tamari, to taste
1/2 to 1 cup nutritional yeast
1 1/2 teaspoons paprika or chili powder
1 tablespoon oil
1 pound firm tofu, squeezed
1 teaspoon salt
pepper, to taste
1 teaspoon hot sauce, optional
3 to 4 tortillas, warmed, optional

What you do: 

1. Mix nondairy milk, apple cider vinegar and bragg's in a bowl. Add nutritional yeast and paprika.
2. Heat oil over medium heat. Crumble tofu into oil and cook for 3 minutes, scrambling tofu in pan.
3. Pour in the liquid mixture and continue to cook until all the liquid is absorbed. Salt and pepper to taste; add hot sauce, if desired.
Can be eaten as a scramble, or add scramble to center of tortilla, wrap the bottom section up midway, then fold over both sides. If using for travel-style breakfast, wrap in plastic wrap or baggie, and unwrap the top while eating, keeping the bottom wrapped/ or in baggie to prevent spillage!

if you really want the taste of egg in this recipe, you might try some indian black salt-kala namak.  it is an imported ingredient i got through a company called salt works.  a little goes a long way and it imparts that sulfuric taste often ascribed to eggs.  will have to try this soon as i like tofu scrambles.

I didn't like the taste of apple cide vinegar.  Omitting that and adding a little bit of lemon juice made it taste a lot better.

I made this for a lunch today and put it on top of a toasted, vegan buttered bagel. It was very yummy!!
I think next time I may add chopped peppers, onions and maybe some chopped tomatoes as well. Or mushrooms!! MMmm I can imagine adding any kind of fresh veggies to this would work well!!

I made this today and we made breakfast burritos out of it.  This is the best of the three tofu scrambles I've tried so far, and also the easiest.  Thank you for a very good, easy recipe!  I only added 1 Tablespoon of the Bragg's and that was enough.  I also recommend adding the salt and pepper into the liquid, for better blending, and the Tobasco was a key element, I think.  Thanks again!    Big thumbs up.

This was an easy, flavorful recipe. I went heavy on the nutritional yeast and it had a great cheesy flavor, but I would use less vinegar next time. It's definitely something I'll make again.
