Crockpot Couscous

What you need: 

1 tablespoon dried onion flakes
2 carrots, chopped
1 (15 ounce) can diced tomatoes
1 (15 ounce) can garbanzos, drained
1 veggie bouillon cube
1 tablespoon diced garlic
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
1 teaspoon cumin
1/2 teaspoon turmeric
1/4 cup raisins
1 1/2 cups cooked couscous

What you do: 

1. Spray crockpot with nonstick spray. Put all ingredients except for couscous into the crockpot.
2. Cover and put on the high setting for 3 hours.
3. After 3 hours, stir the mixture, shut off the crockpot, and then add the cooked couscous. Let set for 10 minutes.

SO HOW'D IT GO?

This is a GREAT recipe. I didn't have couscous so I substituted quinoa. So tasty! As others have mentioned, it makes the house smell great! I think that's the main reason I tried this! Laughing

I made this for lunch today.  I do not keep dried minced onions around so I used about 1/2" of the middle of a large sweet onion.  I could not find my cinnamon so I used a cinnamon stick instead.  While searching for cinnamon, I saw my cardamom pods and decided to throw 2 into the crockpot.  DS who is home from school sick loved it,  DH was OK with it, DD looked at it and said it did not look appetizing but it tasted good.  I loved it.  Pretty easy to make.  I have some left for later meals and I suspect it will be fought over.

This is a fabulous recipe.  I did not have enough raisins on hand so added a few dried cranberries.  I plan on making this recipe often.  Thank you!

I made this yesterday, and even my VERY picky 7 year old loved it.  It had a fabulous flavor and was really simple to make.

Thank you very much for this recipe, it was wonderful!  This was the first thing that I have ever made in a crockpot and it was very easy and delicious.  Being a newbie to the "art" of crockpot cooking, I have a silly question.  If I were to double the recipe would I also double the cooking time?  Thanks again!

We loved this. i added quorn fake chicken breast things and it was a perfect addition. The kids enjoyed this too. i did love the smell of it cooking too.
