Drunken Monkey

What you need: 

1 banana, sliced in eight pieces
2 teaspoons vegan butter
2 teaspoons brown sugar
3 tablespoons dark rum
1 teaspoon water
1/4 teaspoon nutmeg
1/4 teaspoon cinnamon
crushed macadamias, to garnish, optional

What you do: 

1. Saute banana in butter (low-medium heat) for 1 minute.
2. Add other ingredients (except the nuts), stir, saute for 2 minutes.
3. Sprinkle with nuts, and serve hot over pancakes or ice cream.

SO HOW'D IT GO?

I've made this several times and my family and I enjoy it on pancakes. I think I'll have to call mine Virgin Monkey as I always sub vanilla extract for the rum (don't drink or buy). Delish  :D :)>>>

I didn't have any nuts,  rum or brown sugar, so I left out the nuts (but I think the nuts would have made it even better), used Tawny Port in place of rum, and agave nector in place of brown sugar.

I served it as a topping for soy ice cream.  OMG, sooooo good.

Oh my gosh!!! This was so incredibly good. In fact, it tasted so good, that if it could talk and if it asked me to, I would leave my husband, run away with it & become Mrs Drunken Monkey.

It turns out I love to eat rum as much as I like to drink it!  This was easy and delicious with a gourmet taste.  I had mine hot over some Soy Dream topped with cashews.  Fabulous!  Thank you!
