Edamame and Pea Soup

What you need: 

2 cups frozen edamame - not in shells
2 cups frozen green peas
2 cups vegetable stock
2 sticks celery - chopped
1 medium onion - chopped
2 cloves garlic - finely chopped
small amount oil
2 cups soy milk

What you do: 

Heat oil in soup pot over medium heat. Cook onion, celery and garlic until soft.
Add frozen edamame and peas along with stock and bring to boil. Cook at a simmer for about 7 minutes until peas and beans are tender.
Remove from heat and puree in small batches in blender or food processor. Return to pot and add soy milk, heat and serve.
Add less stock or soy milk for a thicker soup, and season to taste.

SO HOW'D IT GO?

Kept to the recipe and just added a little salt and pepper at the end.  It doesn't blend to creamy as mentioned in another comment, but the texture is still pleasing and the flavor is quite agreeable.  This is a very healthy recipe with minimal added fat.  I will happily make this again.

This was niceand beautiful.  I added some lemon and arugula for a bit more flavor.  Very simple and wholesome tasting.

Unlike most soup recipes, this one was quick and easy--and I really liked the flavor.  However, edamame is really too waxy and chewy to blend well.  Good recipe, though.
