Loaded Nachos

What you need: 

1/2 (4-ounce) package ground beef style seitan, crumbled
1 teaspoon chili powder
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1/2 teaspoon cumin
tortilla chips, to taste
1 (14-ounce) can vegetarian refried beans, warmed
cheeze sauce, to taste
guacamole, to taste
1/2 (16-ounce) jar salsa
several dollops vegan sour cream
1/2 small onion, diced
2 stalks green onion, sliced thin

What you do: 

1. Seitan: Crumble your seitan in a bowl and mix with chili powder, garlic powder, onion powder, paprika, and cumin.
2. In a non-stick pan on medium heat, brown the seitan mixture.
2. Lay chips on plate.
4. Layer order on top of chips: seitan, beans, cheeze sauce, guacamole, salsa, and sour cream. Garnish with diced onion and sliced green onion.

SO HOW'D IT GO?

Made kind of a partially healthy version of these today, using baked homemade whole wheat crackers as chips. Topped them with skillet vegan crumbles, pinto beans, grated vegan cheddar cheese, vegan sour cream, avocado and a simple five-minute homemade salsa. So good!! Will be making this over and over for sure, I am a total nachos fan:p

These nachos made it to my "make again" box,. The quac here wasn't for me. It tasted WAYYYY to much like lime, so I'd suggest using a different guac. Also, I was lazy, so I bought pre made vegan cheese sauce. YUM!
