Mexican Corn and Bean Salad - No Cooking!

What you need: 

2 cups shredded lettuce
1 (15.4 ounce) can corn, drained
1 (15 ounce) can red kidney beans, drained
1/4 cup chopped green onions
1/2 cup vegan mayonnaise
2 teaspoons cider vinegar
1 tablespoon chili sauce
1/4 teaspoon chili powder
tortilla chips, to serve

What you do: 

1. Mix lettuce, corn and beans together in a serving bowl.
2. In a small bowl, mix together green onions, vegan mayo, vinegar, chili sauce and chili powder.
3. Pour dressing over the lettuce mixture and stir well. Serve immediately with tortilla chips.

SO HOW'D IT GO?

this is really good, I can't stay out of it! I used black beans. It ended up a little runny but I don't think I drained my beans very well, also I haven't added the lettuce yet because I don't have any, going to add it later when i go to the store. I love corn salsa and this is like a creamy version of that. Thanks for the recipe!

Loved it! I made a little more than half of it and ate it all by myself. Added chopped tomatoes and made my own chili-style sauce from tomato sauce, a little brown sugar, vinegar, five-spice, chili powder and tabasco. Also used black beans instead of kidney.

I ate it with taco shells broken up. Some of it I put directly in the shells like a taco filling. It was great. Good as a dip.

I used sriracha in the actual sauce, but ended up adding Cholula on top....it's super yummy!!

I agree... the picture is what brought me here, too!  What kind of hot sauce is good with this?

Not the most appetizing picture, but it tasted amazing!

Beg to differ-- I saw the pic and thought it indeed looked appetizing.. and I probably wouldn't have checked out the recipe if it weren't for the picture, so thanks! I also like the idea of black instead of kidney beans. I'll try this soon.

Very, very good!  Not the most appetizing picture, but it tasted amazing!
I used black beans instead of kidney....and probably used more chili powder...
Next time I'll add some chopped tomatoes, and maybe a bit more hot sauce!

Mmmm... eating this for lunch right now (had all the ingredients, and so it was super easy).  This is really yummy (and so ridiculously easy - modification-friendly, too)... I can't wait to eat leftovers tomorrow. :)  ;)b
