Mexican Jericallas

What you need: 

1 liter soy milk
egg substitute (I use Ener-G brand) the equivalent to 6 chicken eggs
1 branch of cinnamon (about 10 centimeters long, or 3 inches)
1/4 kilogram of sugar

What you do: 

Heat the soy milk and add the sugar and the cinnamon it boils, let it cool. Once it's cool, add the egg substitute and stir. Pour the mixture (without the cinnamon!) into small oven-safe glass cups. Put the cups in a bigger container with about 1 inch of water. Pre-heat the oven at 392 degrees F and put the container in. Let it cook for about 20 minutes (the top of the jericallas should be brown). Take the container out very carefully! Let it cool and enjoy. The jericallas are better if you eat them cool or even cold (after a while in the fridge or the next day). Mmmmm!
