Oil-free Pita Chips

What you need: 

4 whole wheat pitas
2 tablespoons ground cumin
1 teaspoon granulated garlic
1 teaspoon onion powder
1/2 teaspoon cayenne pepper

What you do: 

1. Preheat oven to 350 degrees F and fill a spray bottle with water. Mix together seasonings in a shaker jar (if you have one) or in a bowl.
2. Warm the pitas for a few seconds in the microwave to make them more pliable, then separate the halves.
3. Spray each side of a pita half with water, and then shake/sprinkle the seasoning on each side. Do them 1 at a time because the seasoning sticks best right after the pita is sprayed.
4. When the pitas are all seasoned, stack them and cut into chip-sized pieces. Arrange in a single layer on baking sheet(s) and bake for about 5 minutes, until they are lightly browned and crisp.
If you cook them in batches, keep in mind that after the first they will cook a bit faster because the pan is hot. Cool and store in a ziplock bag.
Source of recipe: This recipe is based on the spiced pita crisps recipe from Veganomicon. I wanted a healthier version and these come out just as crunchy as the oiled ones. They also cook more evenly and don't burn so easily, which is a bonus because I always used to burn at least one batch when I made them before!
