Omigod Yummy Baked Eggplant

What you need: 

1 large eggplant, sliced
1 cup firm tofu
1/2 teaspoon salt and pepper
2 teaspoons parsley
1 cup mushrooms, sliced
3-4 medium tomatoes, sliced

What you do: 

1. Preheat oven to 350 degrees F. Very lightly grease a cake pan and lay 1/2 the eggplant along the bottom.
2. Before adding, mix the seasonings into the tofu and spread it over top of the eggplant, then add the mushrooms. Next put one more layer of eggplant and top with the tomatoes.
3. Add a little salt and pepper to taste over the top. Let stand for 15 minutes.
4. Cover with aluminum foil and bake for 30 minutes, or until baked as preferred.

SO HOW'D IT GO?

A great recipe idea! Though I admit I modified it to suit my tastes.  When I made it, I left out the mushrooms because I don't care for them, and put in a red pepper and  2 scallions.  I also added onion powder, garlic powder, and chives to the seasoning for the tofu.  I drizzled a couple teaspoons of olive oil mixed with balsamic vinegar, a dash of tamari, and a few drops of lemon juice over the entire thing, before topping with 1 thinly sliced tomato.  I loved it!! :)  Also delicious warmed up and topped with tomato sauce (made from organic crushed tomatoes and spices).
