Vegan French Toast

What you need: 

2-3 ripe bananas
3/4 cup nondairy milk (I use soy)
1 1/2 teaspoons cinnamon
1 teaspoon pumpkin pie spice, optional
1 teaspoon vanilla
bread, any kind is fine
vegan margarine, as needed
maple syrup, to serve

What you do: 

1. Blend bananas, milk, cinnamon, pumpkin pie spice and vanilla in blender or food processor and pour mixture into pie plate or wide dish.
2. Gently dip bread slices into the mix, coating both sides.
3. Fry in vegan margarine in medium-hot skillet until golden brown. Serve with maple syrup if desired.

SO HOW'D IT GO?

This came out very nice. I especially liked the crunchy brown parts, although I am not sure whether they came from the bananas or from the bit of brown sugar that I added (I didn't want to put syrup on them). However, next time, I will make much less of this, as there was way too much liquid for my four tiny bread slices.

Very tasty served with a little honey and fresh strawberries.

As a bonus I mix any leftover batter with a fruit juice to make a breakfast smoothie.

I followed this recipe to a T this morning (except I used almond milk instead of soy) and even talked my nonvegan boyfriend into trying it.  both of us loved it!  Very quick and simple. I topped mine with fresh strawberries and pure maple syrup.  This will be my go to recipe for french toast for sure.

Super easy recipe that used up the rest of the bread we made to go with Thanksgiving dinner.  The kids loved it!  Really great breakfast treat.

I made this yesterday morning for the first time. I followed the recipe exactly. It was delicious!:D Very easy to make too. Serve with some berries or syrup (or both) and you're set.

I made french toast using this recipe this morning and they taste AMAZING! I used sour dough I had on hand and that made them taste even better.

I m going to try this but now I need to make my starter in the morning for the sour dough. TY
