Veggie Chow Mein

What you need: 

1 tablespoon vegetable oil
1/2 Napa cabbage, chopped
1/2 white onion, chopped
2 to 4 ribs celery, chopped
1/2 bell pepper, chopped
1 tablespoon soy sauce
1 tablespoon rice wine
3 cloves garlic, chopped
1/4 block tofu, sliced in small pieces
1 (8-ounce) package angel hair pasta (or pasta of choice), cooked according to package directions
Black pepper, to taste
Red pepper flakes, to taste

What you do: 

1. In a wok or large frying pan over high heat, add and heat vegetable oil. Add vegetables (cabbage, onion celery, bell pepper); cook 3 to 5 minutes, or until cabbage wilts. Add water or vegetable broth if needed to keep cabbage from burning or sticking, stir vegetables occasionally.
2. Stir in soy sauce, rice wine, and garlic, and then stir in tofu; cook for 2 minutes.
3. Add pasta; stir for 1 minute.
4. Add black and/or red pepper.
Source of recipe: I bought some Napa cabbage and needed to figure out what to do with it. This recipe turned out pretty good.
