What is this?!?! You HATE whole-wheat flour??? BLASPHEMY!!!
:P Just kidding. I can see how whole-wheat would probably complicate gnochi. But I still love my complex carbs. WW-Flour and I are BFF's. (That'd be Best Friends Forever, for those who've been away from the middle-school scene for a little too long. :P) I'd fight to defend its honor, but I don't want to get ruined gnochi pelted at me.

ok, maybe hate is a strong word, I just dont think Im using it in the proper recipes where maybe regular flour would be better
what sort of stuff do you make with whole wheat flour?
the ruined gnocci went right in the trash after I ate one, frowned....waited 20 minutes (because maybe somehow theyd get better after they noticed me frown) and then came back, ate another one...and scoop....in the trash

Oh, AC, thank you thank you for the laugh! I've had the same experience with seitan! Would be better maybe to use part WW flour (like maybe a third) and part plain. And mix that puppy reeeaaal gooood. Now if I can just get a lock on seitan---I still think our gluten is different from y'alls.
