congrats on so many posts. I am new, so this is my first...
i am trying to go vegan. I have been visiting the site for about two years now, because it has great/healthy recipes (and i am in love with health and baking). Recently, i saw an animal cruelty video that struck a deep chord with me so I decided to go vegan. I didn't eat much meat to begin with, so i am slowly transitioning. I am not sure how it is going to go. A bit nervous. Any words of wisdom?
any meal plans people could offer up?

it's actua;lly so much easier than you think! do you eat much vegan food now, or is it a total switch?
i eat lots of fruits and veggies, beans, nuts, a few grains (mostly just oatmeal recently).... i made the most delicious creation ever tonight. some kind of mexican lasagna. nom nom.

It IS easy! I went vegan eight months ago, and I haven't been struggling at all. I just buy different things at the store each week. My usual approach is to stock up on veggies, fruits, grains, and beans at the beginning of the week (whatever looks good at the store) and then just free style it throughout the week using whatever herbs, spices, and other ingredients I have on hand. As long as you eat a variety of those things, you'll be fine!
Which aspects of veganism make you nervous? Are there certain foods that you think will give you trouble?

thanks for responding so quickly. I think i will post in the chit chat area with some new questions.
To answer some questions, i already eat really healthy...most of the time. I love fruit and veggies, nuts, beans, soy milk etc. The things i will have trouble with are remembering those odd things that have non vegan friendly ingredients. I dont think meat will be as difficult as the dairy aspect (i bet that is usually the case with most...the meat is easier than that lovely cheese). The good thing, i dont eat just slices of cheese or plain cheese. I have cheese/dairy sauces, yogurt, milk in coffee, cheese on pizza (RARELY EAT PIZZA), butter, items with eggs in them, etc. However, i love soymilk (just don't have on hand at all times...like dunkin runs), cheese/dairy isnt that healthy so that goes with other aspects of my life i try for, i dont crave pizza, i will switch to soy butter...eggs in cookies/muffins/baked goods will be ROUGH!!
The other thing that worries me is people's reactions. I have only told a few people i am going vegan because their reaction tends to be, "COME ON!! WHY?"
any advice on that?

Bakes686.... if you are baking, then you can replace eggs with a flax seed and water mix. It works perfectly and also adds some Omegas to your day. ;D Also, there is this stuff called ener-g egg replacer that also works great. You'll be surprised how good your baked goods can turn out without eggs.

Bakes686, I suggest you invest in some of the awesome cookbooks, as discussed in the cookbook section. There are substitutes for everything on your list and it simply takes some knowledge and label reading!
