Yummy Easy Frosting

What you need:

1/2 cup Tofutti brand "cream cheese"
3 tablespoon earth balance (or other margarine spread)
2 to 3 tablespoons maple syrup
3 tablespoons sugar or sugar substitute (if not sweet enough)
1 or 2 tablespoons vanilla extract
*use almond extract if you want it to take like marzipan

What you do:

Put "cream cheese", margarine, maple syrup and vanilla/almond extract in a bowl and stir until the mixture is uniform. It should be like a thick liquid, or a little heavier. Taste it, and if it’s not sweet enough, add some sugar, or sugar substitute.
Put the mixture in the fridge for 30 minutes or longer, then spread on top of cupcakes, cakes, etc...ENJOY!

Abosolutely delicious!! I recommend doubling depending on what you making. I topped this over some fried cinnamon puffs and it was really good.  tasted like doughnut balls to me.

This worked pretty well, actually!  Make sure the margarine is completely room temp, otherwise the frosting might be a little bit lumpy at first.  Because of the syrup, the frosting has a sort of tan tint to it even if you use colorless vanilla, so keep that in mind.  I used this recipe to frost a 6" x 2" round cake and it was exactly enough.
