12 oz package of soft silken tofu (I like to use White Wave)
a packet of your favorite taco seasoning
1 can of refried beans
1 ripe avocado
toppings such as: lettuce, green peppers, scallions, tomatoes, olives...
whatever you like.
a big bag of tortilla chips
Put the tofu into a big bowl. Pour in the taco seasoning and stir until well mixed. (If you want it creamier, do this step in a blender.) Save this. Then, spread the beans on a BIG platter. Cut the avocado in half; remove peel and pit. Mash it with a potato masher and spread on top of the beans. Put the tofu mixture on top. Now you are ready to cut up any vegetables you want and put them on top.
