1 (15-ounce) can chickpeas, rinsed and drained
1 large or 2 medium stalks celery, chopped
1/2 onion, finely chopped*
1 tablespoon vegan mayonnaise
pinch minced garlic
salt, to taste
pepper, to taste
In a bowl, mash chickpeas (do NOT puree). Add remaining ingredients; stir well. Refrigerate before serving.
* If you want to take the edge off the onions, you can put them in a little container with some water and microwave them for 2 to 4 minutes.
Serving Suggestions: Can be used as sandwich filler, or on a bed of spinach, garnished with shredded carrots, cucumber sliced and fresh, diced tomatoes, as a main course.
