1 cup of lentils
1 cup of uncooked rice (white preferred)
two carrots
1 large white onion
1 really large clove of garlic
2 cubes of vegetable bouillon
paprika
chili pepper powder
salt and pepper to taste
31/2 to 4 cups of water (I use 31/2 and the last 1/2 only if the mush gets too try while cooking)
olive oil
Boil two cups 3 1/2 cups of water with vegetable bouillon. While the water heats up. Cut up carrots into small pieces, and 3/4 of the onion into small pieces as well. Mince the garlic. Once the water boils but in both the rice and the lentils. Lower heat and let simmer covered. Saute onions in olive oil until lightly brown. Add in garlic and other spices. Once all is heated pour mixture into the rice/lentil broth. Now slice the remainder of the onion into rings and saute until lightly brown. This is the garnishing for the meal. Once the rice and lentils begin to take in most of the water add the diced carrots. You don't want to over cook the carrots. They are meant to add texture to the mush. Continue to cook the mixture until the water has been fully absorbed and the rice and lentils have turned to mush with chunks of carrots. Add salt and pepper to taste. I like lots of pepper. I was told this meal looks horrible but tastes fantastic. I hope you enjoy.
