2 quarts water
2-3" piece fresh ginger, peeled and grated
3 lemons, juiced
1/2 cup maple syrup
1. Place water on the stove to boil. Squeeze the freshly grated ginger pulp to remove the juice. Discard dry pulp.
2. When water boils, add the lemon and ginger juice. Let steep for 20 minutes, then add the syrup.
This is very refreshing.'
