2/3 cup barley flour
2/3 cup whole what pastry flour
2/3 cup oatmeal
1 nectarine, chopped coarsely
5-10 blackberries chopped coarsely
1 teaspoon baking soda
1 teaspoon baking powder
1 pint strawberries
1/4 cup ground flax seeds
2 tablespoons sugar
2 tablespoons molasses
cinnamon, allspice, ginger and vanilla to taste
1/4 cup soy milk
Preheat oven to 400F. Spray oil onto bread pan.
Mix together all dry ingredients.
In a food processor or blender process the strawberries until smooth. If needed, add a little soy milk to be sure they are blended and not chopped finely.
To the strawberry goo add the rest of the wet ingredients.
Add the wet to the dry.
Add the chopped fruit.
Bake for around 20-30 minutes until fully cooked.
I made this bread in order to use up some fruit which was going bad. All were very very ripe which I am sure added to the sweetness. It’s hearty and delicious, especially with a little vegan cream cheese on it for breakfast!
