1 1/2 cups flour
1/2 cup cornmeal
1 tablespoon baking powder
1/4 teaspoon salt
1 egg substitute
1 cup soy milk
1/3 cup maple syrup
1 cup blueberries
Mix dry ingredients, mix wet ingredients, and stir them together (don't over stir). Spoon into greased muffin tins and bake at 350 degrees for 20-25 minutes.
