1 cup white flour
1 teaspoon baking powder
1/4 teaspoon salt
2 teaspoons baking soda
1 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon nutmeg
1/4 cup sugar
1 tablespoon lemon juice
2 tablespoons maple syrup
1 cup applesauce
1/2 cup soy milk
2 tablespoons vegetable oil
In a large bowl, mix together all dry ingredients. In a medium, separate bowl, mix together all wet ingredients. Mix two mixtures together. Bake at 350* 10-15 minutes or until golden brown, in a greased muffin sheet.
