1 1/2 cups all purpose flour
1 1/2 cups whole wheat flour
3 heaping teaspoons baking powder (aluminum free)
1/2 cup sucanat (I use about 1/3 C)
2/3 cup applesauce*
1 tablespoon ground flax seed + 3 tablespoons water
1 cup soy milk
sucanat
olive Oil

I firmly believe music is essential to great baked goods, so turn it on and turn it up. I find Neil Young to be great inspiration.
Now grab a large bowl and mix together the flours, baking powder and Sucanat (if you like to add salt to things add about 1 teaspoon of sea salt now as well).
Next take your applesauce and mix that in. You should find the texture to be kind of clumpy, but small clumps. Make sure its well mixed.
Form a well (make a hole in the middle of your flour mixture keeping a bit of it on the bottom).
Now mix that ground flax seed and water and mix that together with your soymilk. Pour that mixture into the well and be sure to mix everything up.
Now its time to use your judgment, the dough will be quite sticky I usually add another 1/4-1/2 cup of all-purpose flour, but still it will be really sticky dough that won't even seem like its able to be rolled out - howe'ver don't fear its possible! Put a nice layer of flour on your counter or a cutting board (a BIG one) and set your dough in as much as a ball as you can form (it'll stick to your hands) and flour up that rolling pin and start rolling it out. Youll need to reflour the rolling pin, as I said this is sticky stuff.
Once that's all done you take some olive oil and brush it on all over the dough, then take your cinnamon and put a nice thick layer all over. Then top with a nice layer of Sucanat. Now comes the tough part, rolling this stuff up. If its sticking a lot to your counter as you try to do this, put some flour just under where the dough is on the counter and flour your hands as you do this. Keep moving the flour as the roll moves and it should work out nicely. Then cut into pieces about 1 1/2 - 2 inches thick. Bake it at 350 degrees F for 25-30 minutes. Mmm delicious warm!
It may sound a bit challenging and you may be a bit put off by the look of the dough but these turn out moist inside with a lightly crisped outside. Hope you enjoy!
*You can try a variation to just applesauce, about 1/2 cup of applesauce topped up to the 2/3 cup line with Orange Juice with pulp in it. I find this adds a nice flavor.
