1 (16 ounce) can refried beans
1 tablespoon crushed red pepper
1 tablespoon chili powder
2/3 cup couscous
3 burrito sized tortillas, warmed
1 1/2 cups lettuce, chopped
1 cup vegan cheese, optional
hot sauce or salsa, to taste
1. Heat the beans over medium-low heat. Add water as necessary to keep beans from burning and bring to desired consistency.
2. Stir in the spices. Boil 1 cup water when beans are almost hot. Once boiling, couscous in a covered bowl with boiling water for 5 minutes.
3. When the 5 minutes are up, remove the cover from the couscous and stir it to make it easier to put on the burritos.
4. Put the beans on tortilla, then the vegan cheese (if using), then the couscous, lettuce and the sauce. Fold burrito style.
