3/4 cup white sugar
3/4 cup brown sugar
1/2 cup oil
1/2 cup applesauce
2 1/2 teaspoon vanilla
1 1/2 cup oatmeal
1 1/2 cup flour
3/4 teaspoon soda
about 3/4 cup peanut butter
1 can chocolate frosting* or homemade chocolate frosting
I got this recipe from my daughter-in-law, Sharee. We have nick-named these cookies Little Bit Bars because you promise yourself I’ll just have a little bit and before long you have eaten a whole row. They are a thin cookie so don't be worried about the lack of batter to spread in a whole cookie sheet.
Cream oil and vegan sugars. Add applesauce and vanilla and mix well. Add oatmeal, flour and soda; mix well. Press into lightly greased cookie sheet. (I use my fingers--sprayed w/ Pam to spread the batter or I use the back of a spoon) Bake at 350 for 15 minutes, just until lightly brown. Take out of oven and drop pan on cupboard (this settles the cookies) but DONT TURN PAN OVER AND DUMP THE COOKIES OUT! Spread top with 3/4 c. peanut butter and cool (about 1 hour). Spread with chocolate frosting. *(Read the labels--Snackwells makes a clean chocolate frosting--or make a chocolate frosting from scratch).
