1 cup margarine
3/4 cup brown sugar
3/4 cup sugar
1 teaspoon vanilla
egg substitute (equivalent of 2)
2 1/3 cup flour
1 teaspoon baking soda
1/8 teaspoon baking powder
1/2 teaspoon salt
1/2 cup shredded carrots
1/2 cup unsweetened shredded coconut
1/2 cup oatmeal
1/2 cup walnuts or other nut
1/2 cup raisins and/or 1/2 cup vegan chocolate chips
For filling:
8 oz vegan cream cheese
1/4 cup sugar or maple syrup
Cream together margarine and vegan sugars, add vanilla and egg replacer until blended. Add flour, baking soda, baking powder until just blended. Then add carrots, coconut, oatmeal, nuts, raisins and/or chocolate chips, do not over mix. Drop on to cookie sheet by spoonfuls, making sure they are all about the same size. Bake at 350 degrees for about 8 minutes, or until edges are browned.
For filling: Whip with a whisk or electric beater the vegan cream cheese and the sweetener of your choice, until blended and a good consistency for spreading. (Optional: add 1/2 teaspoon of vanilla or 1/ 2 teaspoon or orange zest for flavor.)
Allow cookies to cool and spread one cookie with frosting and sandwich together with another cookie. Repeat until done.
