1 1/2 cup self rising flour
1 cup raw sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
1 heaping cup of shredded carrots
3/4 cup orange juice
1/3 cup grapeseed oil
1 teaspoon vanilla
1 tablespoon ground flax seed
Heat oven to 350 degrees. Mix all dry ingredients in bowl. then add carrots. Stir until well coated. Then add remaining wet ingredients and stir just until blended. Pour into ungreased 9 inch square non stick pan. Bake 25-30 minutes.
You can also sprinkle a bit of raw sugar over the top before baking. No frosting is needed for this cake.
