1 cup unsweetened apple sauce
3 tablespoon sugar-free syrup
1 teaspoon vanilla or maple extract
1/2 teaspoon cinnamon
1/2 teaspoon salt
1/4 teaspoon nutmeg
1/2 cup buckwheat flour
1 cup all-bran
2/3 cup rolled oats
1 teaspoon baking soda
sweetener, to taste
Preheat oven, 350F.
In a measuring cup combine apple sauce, syrup (if you can’t find it then use molasses or regular syrup though it'll add calories), extract, cinnamon, salt, and nutmeg.
In a mixing bowl, combine the flour, all-bran, rolled oats, and baking soda.
Add apple mixture to dry ingredients. Set aside.
Cut banana lengthwise and then into slices, not too thin. Gently combine to the other ingredients.
The batter will be very wet. Dont worry!
Drop large spoonfuls unto an oil cookie sheet. Bake for 20 minutes. I flip the pan after 10 minutes so they'll bake evenly.
If you make 15 cookies they are each about 50 calories! They are low-fat and low-sugar if you make them with fake sweeteners. Ok so I know this stuff might be bad for you... but some of us eat it anyhow.
