1.5 cups cooked black beans
1 med. avocado
1 med. tomato
1/2 lemon or 3 tablespoon lemon juice
1-2 cloves garlic (pressed)
2 teaspoon chili powder
1/4 cup vegan sour cream
1/2 teaspoon lemon pepper
1 small sweet onion
1/2 teaspoon cilantro (optional)
Dice tomato, onion, and avocado. Place in food processor with plastic blade, or large bowl if food processor is not available. Add all other ingredients. Blend ingredients until well mixed and creamy, leave some texture for best results. If you do not have a food processor, use a potato masher to combine ingredients.
Chill or serve at room temp. Feel free to add any heat ingredient you like, jalapenos, or chili sauce work well, as does Thai garlic sauce. Cucumber slices work wonderfully as chips. Also makes a good filling for tortillas or pitas with tofu chunks.
