1 cup gluten flour
1 1/2 cups water
1-3 tablespoons cooking oil
1 tablespoon chopped garlic
chili paste, to taste
1/4 cup almonds
1 medium onion, chopped
1/3 cup white grape juice or wine or sherry
1 head broccoli, chopped to florets
1 tablespoon tamari or dark soy
1. Mix gluten with water. Gluten is rubbery if you do one of two things: mix it too much or add too little water. More water is better than less water. It will only absorb as much as it can. Only stir it until it is all stuck together. Dont knead it.
2. Saute garlic on medium high in oil for 20 seconds. Add chili paste, if using, and soy sauce. Add almonds, and stir for an additional 30 seconds. Turn heat to maximum, add onion, and stir until crackling.
3. Add seitan by tearing off 1" chunks into pan. Keep ingredients from burning by occasionally adding grape juice. Add broccoli, stir and steam fry for 2-5 minutes.
4. Add rest of grape juice, reduce heat and cover. Let steam until broccoli is crisp tender. Serve with noodles or rice or add noodles and extra water with broccoli.
