1 tablespoon olive oil
1 clove garlic, minced
1/4 bunch parsley
1 medium yellow onion, diced
2 small zucchini, diced
1 (15 ounce) can artichoke hearts, drained
1 red bell pepper, diced
1 (16 ounce) box orzo pasta
1. Heat oil in a medium size sauce pan. Add garlic to the oil along with the parsley. Let simmer for 5 minutes.
2. Add onion to the oil mixture. Let the onions cook untill they are golden brown. After the onion is done browning, add the remaining vegetables.
3. Boil a few cups water in a small pot. When the water comes to a full boil, add the orzo pasta. Cook untill tender (about 10-15 minutes).
4. When the vegetables become tender, the sauce is done! Serve the veggies over the orzo pasta. This can be served warm or cool.
