1 cup any uncooked pasta (macaroni, penne, shells, rigatoni)
1/2 cup chopped bell pepper (any color)
1/2 cup broccoli chopped
1 cup tomato puree/pasta sauce
1/2 teaspoon chili powder
1/4 teaspoon turmeric powder
1 serrano chili grated
1 teaspoon jeera
salt to taste
1 tablespoon oil
Heat oil in a pan. Sauté cumin seeds (jeera) till it changes color. Add grated chili and sauté for 1/2 minute. Add vegetables and tomato puree/pasta sauce, chill powder, turmeric powder, salt, pasta. Add enough water to cover the contents of the pan and cook the pasta. Cover with a tight fitting lid and cook till the pasta is done. Serve hot with garlic vegan bread.
