1/4 cup chopped firm tofu
16 oz can vegetarian baked beans
2 tablespoon chopped onion
black pepper (to taste)
Place Tofu, Beans, and Onion in a microwave-safe bowl. Heat on High for 4 minutes -covered-stirring halfway through cooking time. Remove from microwave (careful! Its hot). Add as much pepper as you'd like (I love pepper, so I POUR it in there) and enjoy!
I came up with this during my lunch break today. I'm going off to college next fall and this will definitely make a great, filling lunch when I don't have the money to eat anywhere else!
