10 med. to small carrots, grated (about 5 1/2 cups when grated)
2 med. tomatoes, chopped
3/4 cup Vegenaise
1/4 cup toasted sesame seed oil*
3 tablespoon diced onion
5 sprigs fresh parsley
* You should not substitute the toasted sesame seed oil in this recipe. It is what makes it super yummy. (Unless you are allergic to sesame seed of course.)
Grate carrots with either a food processor or with a cheese grater.
In bowl with grated carrots, add chopped tomatoes, mayo substitute, sesame seed oil, onion & fresh parsley.
Mix. Ready to serve!
For added color, try topping it off with Dried peas and Dried cranberries.
For added flavor, add Pine nuts and Cashews.
