1 16oz can of peas
2 tablespoons of margarine
1 teaspoon minced garlic
salt and pepper to taste
Blend peas (with that pea juice that comes in the can) and garlic on high for three minutes or until smooth. Transfer to microwave safe container and microwave until hot, then stir in the vegan margarine and add salt and pepper to taste. (The vegan margarine makes it a bit creamier...it is optional) My mom would make this soup for me after school whenever it rained...a nice, cozy tradition that I still remember.
