1 pound fresh or frozen okra (can be left whole or cut in half, lengthwise)
2 teaspoons olive oil
2 onions, sliced
1 1/2 teaspoons fresh ginger
1 1/2 teaspoons garlic
1/2 teaspoon turmeric
2 teaspoons coriander
2 teaspoons cumin
salt to taste
2 whole tomatoes chopped (or 1 can of diced tomatoes)
1 teaspoon chili powder
1 teaspoon garam masala
Grind ginger and garlic into a paste.
2. Heat oil over medium heat, add onions, ginger-garlic paste, turmeric, coriander, cumin, and salt. Sauté 1-2 minutes.
3. Add tomatoes, chili powder, okra, and masala. If dry, add 1/4 cup water.
4. Cook, covered, 15-20 minutes.
