3 cups cooked brown rice
1 cup rice milk
Ener-G Egg Replacer for 1 egg
1/4 cup raisins
handful of granola (store bought or home-made)
1 teaspoon cinnamon
Preheat oven to 350 F.
Mix all ingredients together well, and place in greased casserole dish. Place casserole dish in a shallow baking pan filled with 1/2 cup of water (this will keep the pudding from drying out). Cook for about 20-25 minutes or until knife goes through pudding and comes out clean. Enjoy! This is definitely a favorite treat at our house. Maybe it will be yours too. :)
