1 package of firm or extra-firm tofu
1 box of instant Spanish rice (Uncle Bens or whatever)
1 can diced tomatoes (or dice your own)
2 tablespoon of margarine
2 tablespoon of oil
1 yellow squash
1 zucchini
Cut the tofu, squash and zucchini into small cubes and set aside. Prepare Spanish rice according to the recipe on the box. While this is simmering, steam the cubed vegetables in a large pot. In a pan, add the oil, let heat (over medium high heat) then add the cubed tofu. Fry until golden brown on all sides, when it is drain the oil. All three of these dishes should be done at the same time. Mix them together in the large vegetable pot and serve.
