1 lb of fresh green beans, timed into 1 inch pieces
1 tab olive oil
1 clove of garlic, minced
1 lb of ripe tomatoes, finely diced
1 teaspoon salt
1/2 teaspoon dried oregano
ground black pepper
2 boxes of flavored couscous (I use toasted pine nut by Near East)
1 can chickpeas, rinsed
Cook green beans in a large salted pot of boiling water for 5-6 min, until tender and drain in a colander.
Heat oil in a large skillet (a wok is still my fav) to med heat and ad garlic. Cook garlic for about one minute and add tomatoes, salt, oregano, pepper, and green beans. Bring to simmer and cover with foil to cook for about 15 min. Cook couscous according to package directions, don't forget to double up when cooking two boxes! Uncover skillet and stir in chickpeas. Cook another 5 min or so. Serve on top of couscous.
I love making this! I have served this to many meat eaters who where expecting rabbit food and where amazed how filling and flavorful this is! I love serving this with falafel and my roasted red pepper hummus!
