[u]Dressing[/u]:
1/3 cup water
3 tablespoons lemon juice
2 teaspoons vinegar balsamic
1 clove garlic, minced
1 teaspoon salt
1/4 teaspoon allspice
1/4 teaspoon black pepper
1/2 teaspoon cumin [u]Salad[/u]:
2-1/2 cups cooked millet
1 cup chopped string or green beans, or 1 cucumber*
2 large tomato, chopped
1 medium onion, chopped
1. Dressing: In a bowl, whisk together all dressing ingredients.
2. Salad: In a serving bowl, combine all salad ingredients. Drizzle salad with dressing; toss gently to coat.
3. Chill before serving.
* If using cucumber: Peel several strips (it should look striped) and cut it lengthwise into 4 pieces. Remove seedy center part, then slice in half.
