1 cup couscous
2 cups boiling water
1-1/2 cups frozen yellow corn
16 cherry tomatoes, halved
2 cups cooked black beans
1 small onion, chopped
1/2 cup cilantro leaves
1/2 habenero pepper, seeded and minced
4 cloves garlic, minced
3 scallions, sliced
cumin, to taste
rice vinegar, to taste
salt, to taste
1. Put couscous in a bowl and cover with boiling water. Cover until water is absorbed, about 20 minutes.
2. Mix in the frozen corn. (The heat from the couscous will thaw the corn.) Add the remaining ingredients (tomatoes, black beans, onion, cilantro, habenero, garlic, scallions, cumin, rice vinegar, and salt), Mix well.
This tastes great at room temperature. I'm having a big bowl of it for lunch today.
