2 tablespoons olive oil
2 heads dark leafy greens (e.g., kale or spinach), washed and in broken into pieces
water
1 (15-ounce) can Great Northern white beans
3 to 4 cloves of garlic, to taste, minced
fresh ground pepper, to taste
1. Put greens in large sauce pan. Add water (not quite enough to cover greens) and boil for 1 to 2 minutes, or until tender. Rinse with cool water and drain.
2. Add beans, garlic, and pepper. When warm, add the cooked greens. Simmer to enhance flavors or serve immediately.
