1 teaspoon sweet mustard, optional
1 tablespoon hummus
2 slices whole wheat bread
1/2 carrot, grated
1/2 green onion, chopped
1-2 sprigs fresh cilantro, chopped
1 slice tomato
1 piece romaine lettuce
1. Spread the sweet mustard on one slice of the vegan bread. Spread the hummus on the other slice.
2. Layer the carrot, cilantro, green onion, tomato, and lettuce on the vegan bread and enjoy!
Bread is also good toasted.
