2 slices multi-grain bread (check ing. for vegan, but I like Oroweat Oatnut)
hummus
sliced red tomatoes
sliced cucumber
sliced red onion (optional)
sliced mushrooms
sliced avocado (optional)
alfalfa sprouts
salt and pepper to taste (or Cavenders Greek Seasoning)
veggie cream cheese
Assembly is really easy. I spread a fairly thick layer of hummus on one slice of the vegan bread and cream cheese on the other slice. (I do eat dairy, but I'm sure the veggie version would work fine.) On the cream cheese side, I layer the tomatoes, cucumber, onion, mushrooms, avocado and sprouts, then set the hummus side of the remaining slice of bread on top of the sprouts. I like using Cavenders Greek Seasoning on the tomatoes before I put the rest together. Experiment and enjoy! :) (This is not low-fat, but it is tasty!)
