9 cups of water
1/2 tablespoons olive oil
1 box of cooked squash
1 can of kidney beans
1/2 bag of frozen chopped kale
2 handfuls of fresh dandlion greens, chopped
1/2 bag of frozen mixed vegetables.
1 small onion, chopped
1 medium potato, cubed
2 handfuls of pene or other pasta
2 handfuls of rice (Basmati is what I use)
1 Tbs of hot crushed pepper (sea or vegetable salt to taste)
First you will need a stock pot or just a good size pot. Pour 9 cups of water into the pot. Bring to a rolling boil at a medium temperature. When you see it is boiling add squash, half a can of smashed beans,the rest of the can of beans with liquid, onion, potato,kale, dandelion greens,and mixed vegetables. Boil until greens and potatoe are tender. Then add pasta, rice, hot crushed pepper and olive oil. A little sea or vegetable salt to taste.
I like this soup because it is inexpensive, makes a large quantity and is soooo delicious!!
