8 oz. of firm tofu cubed
2 cups of water
1/2 onion diced
1/2 cup broccoli chopped
1/2 cup baby carrots
1 veg. bullion cube
2 tablespoon soy sauce
1 tablespoon hot sauce
cayenne pepper and Spike Seasoning to taste
1 tablespoon olive oil
This is a quick tasty recipe that I came up with on the fly.
First, put the water into a medium sized pot. Turn the stove on medium hi and add the bullion cube soy sauce, hot sauce and olive oil. Once bullion cube dissolves, add in the chopped veggies. When the broth comes to a rapid boil, add in the tofu. Turn the stove down to low and let simmer for 15 to 20 min. Add pepper and Spike to taste. Serve with vegan crackers on the side. Enjoy.
