1 28 oz. can soup
1/2 cup chopped celery
1/2 cup chopped carrots
1/4 cup chopped sweet red pepper
1 small onion chopped
fresh basil chopped
1/2 cup rolled oats
4 cups vegetable broth
1 or 2 tablespoon oil
1/2 teaspoon Italian seasoning
1/8 teaspoon cayenne pepper
1/8 teaspoon turmeric
1/8 teaspoon garam masala
In a large pot, saute onion, celery, red pepper, and carrots, till onion becomes translucent. Add veg. broth, tomatoes, oats, seasoning, and copped fresh basil. Bring to a boil then reduce heat and simmer till carrots and celery is soft...stirring frequently to keep oats from sticking to the bottom of the pot. Cool slightly and pour little at a time into blender, blend till smooth. Return blended soup to pot and reheat...add more seasoning if necessary.
