3 tablespoons olive oil
2 small onions sliced
4 small carrots chunked
1 small yam or sweet potato chunked
2 teaspoons garam masala (spice mix found in Indian stores)
10 oz can Rotel spicy tomato sauce
6 cups water
4 cloves minced garlic
1 tablespoon soy sauce
handful of mushrooms
2 white potatoes chunked
2 ribs celery chunked
1 1/2 cups cauliflower chunked
1 zucchini chunked
Saute onions, carrots, and yam in olive oil for a couple of minutes. Add garam masala and cook a couple of minutes. Add tomato sauce and simmer for a couple of minutes. Add water, soy sauce, and garlic and bring to a boil. Then add mushrooms, potatoes, red pepper, and celery. Cook till tender with lid slightly agar Then add cauliflower and zucchini cover and cook till done and serve with brown rice.
