1 can mixed vegetables (drained) 14 oz
2 cans stewed tomatoes 14 oz
1 can any kind of legumes (drained) 14 oz
1 cup shredded green cabbage
1 large onion chopped
4 cups water
2 teaspoon oregano
1/2 teaspoon black pepper
1 tablespoon vegetable oil
Heat oil in Dutch oven on stove top. Saute cabbage and onion until translucent. Add water, stewed tomatoes and seasonings. Bring to boil, turn down heat and simmer covered for 10 minutes. Add beans and mixed vegetables. Simmer, covered, 10 more minutes. Thats it. Sometimes I add a handful of quick cooking barley. Tastes great the next day too.
About 2 cups per serving.
