pasta - ziti, butterfly, whatever makes you happy 1/2 to 3/4 bag
1 can artichoke hearts, chopped
3 cups broccoli (broken into pieces)
1 cup shredded carrots
1 tomato chopped or 5 sundried tomatoes soaked and chopped
1/2 package mushrooms, sliced
1 onion, chopped
1/2 bag spinach
1 teaspoon oregano
1 teaspoon basil
salt and pepper to taste
2 teaspoon olive oil
vegan parmesean substitute
Saute onion in oil. Put pasta on to cook and cook till al dente. Add veggies - carrots and broccoli, then others plus spices. Cook til carrots and broccli are cooked crispish, other veggies are cooked. Serve over pasta w/vegan parmesean. Delicious beyond its simplicity.
